 Post subject: Just made my own noodles

I just made my own noodles. By made my own I mean I made it from scratch, using flour and water, and then beat it and knead it until my wrists hurt... I've took a picture but can't download it anytime soon (it's a hassle to copy the picture from my mobile phone).

It's an (almost) complete failure though ;P It have uneven width and thickness, and it's too thick so the texture isn't that good (at least I kneaded it long enough so it's chewy enough). To make thing worse, I used too much pepper and I run out of fish ketchup for the stock... Well, I kinda made it on impulse, so I didn't make enough preparation. I even don't have all necessary equipment (no rolling pin, no wide enough table, no ready-made stock to safe me from insanity).

For those who also have made their own noodles, do I need to knead the dough so it's elastic enough to be hand pulled? Or just not sticky is already enough (and I can move on to next step)?

Generally speaking, the longer you knead them, the better. The flour needs time to form the flexible connections you want in your noodles, so you should definitely knead it until it's elastic enough to be hand pulled, maybe even longer than that.

What sort of flour are you using? I sometimes make buckwheat noodles (though not original soba), and that's always lots and lots of work.

I use all-purpose wheat flour, I think (don't know what it's called in English)? It's flour that could be used to make bread and noodles.

I've knead the dough for more than half hour but it still doesn't elastic enough while the recipe claims 20 minutes is enough. I wonder if I knead it wrong?

It's called "wheat flour". :)

20 minutes should be enough. I'm using a rolling pin; maybe it takes longer when you only use your hands. Have you tried adding a tiny bit of oil? (Peanut oil works reasonably well.)

I see... I didn't use rolling pin, just my bare-hands (and now my arms muscle aches). I will buy rolling pin and noodle maker for next time. Haven't thought about the oil. Will try it if my second attempt still fails.
