Zombies traditionally were corpses brought to life through magic. The transition to using stuff like viruses and such is just a way to modernise them since more people are likely to kind of believe in pseudo science than magic. The definition has changed a lot and to a certain extent lost meaning because people use it to describe anything that eats human flesh apparently.

The fascination with zombies is because they are like us. It's like staring into a what-if mirror. The horror element traditionally comes not from the danger of the zombies themselves, but of the inevitable that they will eventually get you. If I had to take a stab at it, zombies represent death incarnate. However, that element has changed with the idea of 'super zombies' that some how lose all higher cognitive function but still retain the ability to move and function like normal... which makes them less zombies and more out of control cannibals.

I find it amusing how words can change. none of these were originally related to the term "zombi."

I think this actually has to do with the general stereotype of any mythical creatures related to "darkness" have the ability to spread this way. I've heard the same about vampires, werewolves, ghoul, etc.
