Self ratings are essentially useless-oftentimes writers will be too harsh or too light on their work, and the general audience doesn't really care. Surprisingly, this has been done before. (H2O: Footprints in the Sand)
I'd personally add sepia tone stock background to both represent the character's "mental map" and to give the player a point of reference, though.
Either way, you'll need some godly sound design to make up for it.

Without information on the game, it's hard to say. Most visual novels have the music playing >80% of the the time, so if you're up to composing that many tracks, then that's fine. Otherwise, you'll need to make sure that the writing's good enough to convey the emotion otherwise conveyed by the music...

The best advice I can give for making branching paths in longer novels is putting choices where you think the player would like to make a choice; if you can't tell, then try to get someone else to read the script for you. Something to keep in mind is that F/SN and Clannad are at the extreme high end...
