I think having one concise route at the end of the demo is a good idea! It gives everyone the same experience, which is important if you want feedback on the same bits of game. I look forward to trying it out :)

I think the GUI looks clean and very professional! I definitley prefer a more immersive feel, so actually having that option available to players is a really good idea when personal preference comes into play. The sprite looks great! I love the tones and colors that were used-it suits Sage's look really well. The clothing also gives her a sort of mysterious appearance, which is also really cool!
