Try adding some debug statements to see if it's actually getting to the bits of code it's supposed to? You probably want to set _game_menu_screen in an init block, so it'll be changed before the game starts. When you change normal variables after the game has started, the change is stored in your saved game - which makes loading an old saved game reset _game_menu_screen to whatever it was at the time...

If the game was written with an accelerated version of Ren'Py AND the problem is acceleration-related, it may work to hold down the shift key when starting the game, then tell it to prefer the software renderer. I believe that holding down shift doesn't work on MacOS; to get to the software renderer...

You can override the default save screen with a custom one that allows you to name files, but it's a fair bit of work.
