I guess it depends on what you intend to do with your story. If the main idea is simply to get to know all of the different characters, I don't see a huge issue with the lack of an overlying plot (an example of this being the animal crossing games.) Personally, I write out all of the choices before moving on so I don't lose track of what I have and haven't done, especially if each choice leads to its own little scene. The only times I jump ahead is if I have some crazy inspiration going for a different part, though that usually ends up needing ...

I'd ask for specifics as to why they didn't like it. Ask specific questions and have them cite reasons as to what they did and didn't enjoy. If a play tester says "I don't like it" they need to be able to offer some insight on their conclusion.

As someone who is in a near identical spot as you, the main issue I constantly come across isn't whether or not I can do it or if I should do it. Its a matter of how badly I want to do it. I look at what types of things I enjoy in terms of stories and art and try to extract the specific parts that I liked. Things like genres, character types, plot points, ect. Then just shave them down and simplify them, so I have a base. Also, I compile any idea I have, no matter how I feel about it....
