the tag feature of vndb is the closest thing i can think of, and i know the theme section of the tags (https://vndb.org/g1) has more commonly-known genre listings

If you mean in terms of story genres, then you'd have the same genres that apply to any medium (such as Romance, Tragedy, Horror, Mystery, etc.), but if you mean things like something more specific to visual novel or story-based games, all I can think of are...

Bishoujo / Galge (male protagonist, female love interests)
Otome (female protagonist, male love interests)
Josiemuke (games aimed at a female audience)
Hentai / H-Games (games that contain explicit sex scenes)
Eroge (erotic games)
Dating Sim (as the name suggests)
Kinetic (a visual novel with no choices or branches)
Linear (a visual novel with choices but leads to the same ending)
Sound Novel (NVL mode VNs with sound and minimal graphics)
Text Based / Interactive Fiction (a story based game with minimal to no images)
