Yes actually... I have started working on an unnamed project (now called My Dear Teacher - Mr. K) a few months ago (IIRC I have posted about it in here quite a while ago... if only I could remember where it was) and it originally only has two (2) girls Elena and Cecilia but my knowledge in Ren'py back then is quite limited and progress is slow (things are different now).Just curious was this your long-term project all along
Also, Mr.K (Gan Kalibo) originally started as a 6o year old high school teacher but later revised him as a 30+ guy but nevertheless the story remained unchanged (with few minor modifications).
One of the major changes from the original is removing regional (Locality) specific content as much as I can (Jokes, Scenarios, Etc...) so everybody can enjoy the story (regardless of country of origin).
Second, I removed uneccessary/redundant scenarios and make sure not to bite more than I can chew (I make sure I don't set my sights on unrealistic goals and carefully plan everything before I commit any effort).
But the most important thing I have learned after all that is to plan everything carefully and stick to the original plan (For those who voted for the Meganekko option... NOPE! not this time). Because changing something in the middle of the script can lead to unforseen consequences (like More Delays, Screwed-up story flow etc...)

It's not going to be easy, but better to have some flavor even if its not for everyone's palattes than no flavor at all. Even the way the author grew up will influence how he thinks and writes, so there's really no way to erase culture and locality from a work. The only thing left is just to make it authentic. The corollary is that there is no greater offense than for an author to write in a culture he is not an expert in (for example while none of us can truly write in a Japanese perspective, we are still capable of writing from a global Japanophile otaku perspective.)
I just had to let those out but I still respect your decisions so you can make the entertaining product you want it to be.
