Whenever a shirtless scene comes up I go "...". I'm quick to skip the parts if the guy is all muscular as well - I'm not a fan of muscular types, or extremely thin types either. I like the normal types, the ones that aren't 'toned' at all. The only time I've seen a shirtless scene of a guy who wasn't muscular, was in Megatokyo, and the guy had lovehandles!
I have also always disliked characters with glasses, since they're forced to a certain personality stereotype that I hate.
To me fanservice is not something that appeals to me in the opposite sex, but more along the line of my favourite couple that I ship getting moments together. That's basically it.

^ For me, not really xD;; I'm not so much into guys that are too muscular, it makes them look rock hard. But I'm not a typical case, I don't like boy x boy or catboys or anything else like that either, so I dunno. My tastes probably only speak for a small minority.
For me, it's
-crossdressing. Traps, reverse traps, closet transvestites, forced crossdressing, regular crossdressing, it's all good.
-ladies and their servants. perfect opportunity for femdom. "You said you would do anything for me, right?!" "ooh nooooo milady it's forbidden we mustn't---" *flower drops from vase* ...Hell yea. It's rather unrealistic, so it's true fanservice.
-weird-ass dream scenes. Where anything can happen without really affecting the main story. It's like fanfiction within a game. ultimate fanservice opportunity. Shouldn't be overdone or done in a super serious game though.
-FOOD. oh god yes. guys that can cook, or scenes with eating food, or long descriptions of delicious food, "you have something on your face"... sometimes I wonder if I have a food fetish.
-scenes where MC takes care of sick person X or MC gets sick and person X takes care of her
-epilogues, post-game chapters, etc. I love these. or even game sequels, though they are never as good because they're sidestories, are lots of fun (if the first game was serious, it can have a funny sequel!).
and so on.

Based on my sister's tastes, I'd say it's partly about the pose and subtle or not-so-subtle innuendos. Fer example, does this count as fanservice for women? I'd say so, but I'm just a cute little nubbycakes

Usually glasses do it for me
When a guy who usually wears glasses takes them off in the most dramatic way possible, I swoon. When a guy who usually doesn't wear glasses puts them on in the most dramatic way possible, I swoon. Sometimes I like shirtless scenes, but it depends.

Maybe I'm just not straight enough, but I seriously can't think of anything that would make me go *Squee* "OMG".
Sure, I won't say no to a good shirtless scene, but it doesn't exactly hit any kind of weak spot.
Does it count as fanservice to show a guy being all sweet and shy and...uh...family-father-type-like? Cause seeing a guy (preferably one who's all...tall and big and muscly and rough-looking) like that...now that makes me all warm and fuzzy. I dunno, I guess I just like the type of guys who you know would be a good father. (which is weird, cause I don't even like kids)

I actually LIKE muscular guys... Not super beefy mind you, but a nicely toned man sits quite well with me. Someone like Dante from Devil May Cry 3 comes to mind.
So yes, a shirtless guy is shameless fanservice I can admit that I like pffff. Personality-wise, there are many types I like so I can't think of an exact characteristic that I prefer right now.

Not only is it uncalled for and embarrassing, the girl would probably slap him for doing that.
On another note, I remember reading an article about how men and women differ when it comes to *cougharousementcough* which may or may not be related to this particular topic. I don't want to post it here, but it said that men were more "turned on" by visual stimuli while women preferred physical contact. So looking at girls in bikinis is fanservice for guys, while a hug would be fanservice for girls (sounds weird when I say it like that >_>).

Of course, sometimes that kind of thing is used as an excuse for why people don't bother putting anything for girls in their works, because "well, women don't care!" And women get *used* to not being catered to, and... cycle perpetuates.men were more "turned on" by visual stimuli while women preferred physical contact.
I like to point to the first Mummy movie as a good example of catering to both sexes. It's an action flick, it has a girl running around wearing nothing but paint, and it also has exceedingly hot guys. Obviously nothing is going to be to absolutely EVERYONE's taste, but it gives the impression of having tried.

Plastic-looking "sculpted" abs (like the ones jack_norton posted, -sorry!-) are not attractive.
Whenever I see people draw them I'm like "What the hell's on that guy's stomach?". It also makes me conclude they spend more time working out than doing anything productive. I actually prefer a chubby guy to a ripped or skinny guy... it's more comfortable to cuddle with someone that has a little padding (but not too much padding, if you know what I mean).
Personally I like hairy, mature MASCULINE men! arm hair, chest hair, beards, moustaches- they're super attractive. If there's anything that a man should sculpt it should be his glorious beard. Well-groomed beards are instant turn-ons for me, though stubble is good too. Examples of hottness (warning image dump):

Gordon Freeman, awww yeah

Dexter Morgan/Michael C Hall (you should see him shirtless... It's very yummy.)

Adam Jensen from the newest Deus Ex game. I don't think he'd be very comfortable to cuddle with because of his robotic appendages, but he is still very attractive...
