If this question is beacuse you have a problem to know when to give options, basically that is usually whenever it's relevant to the plot, when your choice actually matters I would say. But some games may also include more choices just to give a more personal feeling to the player that they can really be themselves (and not automatically give an answer they don't want), maybe some games overdo it though. I saw more games that feels like they have too few choices than too many though.

As a programmer: No. Heck, program a game like that and I commit suicide the next day.
As a write: No. My brain will explode from thinking different results and stuff in every answers.
As me: No, it's troublesome and if I ever play a game like that, I might as well not play a game at all. It's even more difficult that deciding how I'd live my life on the next 10 years from now.

everything's been plotted out, but i noticed recently that I made a lot of "secondary" questions that more or less affect the Arcs and the plot itself... I hope I don't overdo it... also, A lot of if-else statements.
I admit that I've been writing instinctively... based on a predetermined flow of the game.

Well the truth is nobody can tell you before hand what the game will "feel like" when you play. If you feel yourself that there are too many questions then you are probably right (no guarantee though!), so try to find out which questions don't really add to the game and which ones are more important. Good luck!
Edit to add: for example a question that gives you a few more lines of dialogue but doesn't really affect plot points or endings in an important way can probably be skipped unless it really adds some spice to the character interaction. Even then you might be able to include this "spice" in a different way than more choices.
