Say you're writing a first person story...
...and your protagonist dies, how do you continue the story? Switch the perspective to third person or switch the perspective to the heroine, or something else?

Depends on the story.
In a drama, reveal that the protagonist had been dead all along and was narrating the story just because he could. (Think "American Beauty".)
In a post-modern story, don't continue. End the story in mid-sentence.
If there's no real option, change perspectives.
In a horror story, just let the protagonist continue with narrating what comes after death >:-)

As Taleweaver said, I think it depends on your genre a lot. In general though, I think shifting from 1st to 3rd person would be jarring. Without knowing anything about your story, I'd recommend either have your protagonist continue to narrate, or let another character take over.

You can also have it like in Desperate Housewifes.
Your main character dies in the very first minutes of the game and then comments on how everyone is coping with the death - or just continues to live their life without making a big scene out from that.
This way you get a MC that dies and a narrator that comments and still is first person :3
