What is the best way to go about making a VN with text, but no art (or music)? Should I use NVL-mode? I find it kinda confusing and don't understand it well, but it seems to suit my purpose.
GUI elements like buttons and such may still be used, at least on the menu, but I'm hoping to circumvent all other art.

So you just want to make a text adventure, not really a visual novel? If you don't have much programming experience you might be better off using Twine than Ren'Py. It's really simple to learn, and while I haven't interacted with them much myself, there does seem to be a community of people who enjoy twine stories. But if you prefer using Ren'Py, then NVL mode rather than ADV mode makes sense. This tutorial should help, if you haven't already seen it.
