This is indeed very ambitious for a beginner, but you've made a good start by listing everything you intend to include.
I'd personally advise to tackle each item on your list one at a time.
Start with the simple things before moving on and then learn how to slot them together.
Most of what you've listed has some sort of cookbook entry that could help speed development up.
For now, I'd suggest learning how to add customizable name, gender, and pronouns for the main character and then move onto hie to manipulate those or use them elsewhere (such as in screens)
While the list you've laid out is large and daunting, if you look at the listed features as a single thing, you'll find them much easier to manage and can worry about the whole later.
Good luck and remember the forum is always here should you get stuck or not understand something. Some people will even do part of the work for you freely. (it's good manners to credit them though)
