If you are paying a professional, they will probably be a lot faster on the art side. It took me 2-3 weeks to get everyone drawn.I thought about this, but if I complete the entire script before getting artists on board then I wouldn't be doing anything while they did the art work. I thought it would be more efficient to be working on the script while they work on the art.

Yes, that would be a preferable method. That way the artists are fairly compensated and you will be able to create the game quickly even if it takes you longer to make the money. Not to mention, if crowdfunding fails, you have a fall back from your own cash reserves to proceed with the game. Otherwise your artists would probably leave since they will not get compensation.
