Episode is designed for mobile. Standard VNs are designed for consoles or PCs. They have different expectations.
Build the basics first, then add all the fun bits.

I don't really know Episode (I play on computer), but I do prefer short stories, as I usually play VNs in the train. (I like being able to start and finish a new game in one trajet, or in one week-end.) Now, there's still exception, and I do like so very long and rich stories. But with longer stories, there's the risk I play a little, then doesn't play for a few week, then, when I start playing again, I forget a lot of things about what happened before. (And also, there's more risk I will grow bored of a game if it's long; I don't have the time to grow bored with shorter games)

As you've mentioned before, both platforms have their merits, and neither are safe from me devouring them. The only thing that'll really keep me away is poor writing.

This is probably obvious, but for me a lot of it is in quality. If it's Not Good, then I prefer it to just be over sooner... But those really great stories that go on for ages are some of my favorites. I remember after I finished playing Umineko (over the course of a few months) I just sat there thinking 'what now?', I like that really ambitious slow burn stories leave a gap when they're over.
So I guess: slow and good > quick and good > quick and bad > slow and bad (though even my completionist brain tends to give up on those before they're over haha)
