I've been watching Spider-Man TAS (1994) which hasn't aged fantastically but I have a lot of nostalgia for it and am enjoying it thoroughly.
Series I think are particularly good;
Avatar TLA (I heard the different subtitles were made because "bender" is a derogatory term in some parts of the world)
The Legend of Korra could have been better but it was still enjoyable
Phineas and Ferb
Samurai Jack
Danny Phantom
Invader Zim
The Grim Adventures of Billy and Mandy
Unfortunately I haven't seen any of the Batman cartoons, but I plan to remedy that once my Spider-Man binge is over.
Note to those who are interested, the 1994 Spidey is available for streaming on Marvel's wedsite, the old X-Men cartoon too I think.
Series I think are particularly good;

I'll have to go for Adventure Time as my favourite. I'm yet to find a dull episode.

I totally, TOTALLY love the Powerpuff Girls *__*
It's so deep, amusing and it makes fun of itself and cliches constantly.
I also love Darkwing Duck and even bought the pack with all episodes and watch them regulary (I adore the episode with the love potion so much, Negaduck is just awesome in that one xD)
But I also enjoyed darker cartoons like Gargoyles, Mighty Ducks, Extreme Dinosaurs and Mummies Alive.
Well, but I also have a hard time getting to know many cartoons, because Germany is only importing children animations (Anime as well as Cartoons), so it's hard to find attractive cartoons that aren't like "A is like Apple. I love Apples! Let's look at a apple tree."

Well it's kind of moot, they are ALL made in South Korea, including Simpsons and Family Guy.
Interesting fact, The Pirates on Avatar The last Air bender were modeled after the primary animation team in Seoul.
