I don't really have an anime that I reaaaally like over everything else, but these are the ones that are on the top of my head that I really liked:
Dragon Ball Z/Kai
Hunter x Hunter (both the new and the old one...there are differences in the stories after first and following mini arc)
Kokoro Connect
Koi to Senkyou to Chocolate
Gundam Wing (though I can't seem to watch that anime anymore...should try again sometimes!)
Persona 4 (it definitely follows majority of the game!)
Sailor Moon
Working!! (and its sequel as well!)
Yumeiro Patisserie
Yu Yu Hakusho

I have to admit I adore so many Animes, but I will name a few.
FullMetal Alchemist - I have to admit it is My total favourte Anime, It is sad, Funny and Totaly BadAss.
Ghost In The Shell (Movie) - I've only watched the 1st movie, but it's really intresting and badass. I'd say the soundtrack is really good.
Kuroshitsuji/Black Butler - Victorian timeframe which is my fave timeframe, funny, sad and dark. It is another Badass Anime, You can really feel the emotion in it.
Soul Eater - I must say it's more comady then anything else, a little sad in parts and quite good for battle scenes.
Loveless - Yaoi(BL) I found it mostly sad, but It just makes you wanna watch it to the end.
Hetalia - History played out by hot guys and totaly funny as hell. A long series of short episodes around 5 minutes. It is worth watching, totaly EPIC.
Black Lagoon - A small team of people who are like devery boys for one of the characters older sister, they get into guns and stuff (Hard to explain)
Ergo Proxy - only watched a little bit of it, but its pretty intresting sort of futureistic, but very good.
Death Note - Awesome series, Creepy Shinigami and totaly badass, Loads of deaths made from a single black book, good conflict between Light/Kira and L
Teen Titans - The old comics in animation, my first fave cartoon/anime and brillent (good fight scenes and funny moments)
Pandora Hearts - Old styled timeframe and creatures called Chains from the Abyss. Its more of trying to help the B-Rabiit/ Alice find her memories and unlock the Tragity of something ancient. Very good and intresting and funny
Fushigi Yuugi - two bestfriends get sucked into an ancient book that takes them to acient china where there are two sides Seryuii and Suzaku and 7 members of each group, the girls get split up and become the presitess of the two sides causing conflict between them both. It is quite funny, One of my first Anime's
Elfin Lied - Badass and super sad moments, its brillent and the main character Lucy/Nyu is split between 2 alteregos (Human and Demon?) Hard to explain, but very gorey
Higurashi - A group of teenagers in a village are hearing about a demon guardian, theres an outbreak of a mental illness which causes them to go insane and attack each other, the demon who is really a female childhood friend of one of the girls brings them back to life to try and save her friend. Very bloody and gorey another hardcore verison of Umeniko.
Umeniko - everyone year a family goes to there grandfarthers island, suddenly there stuck and the grandfarthers time is near its end as they need to find the hidden family gold or the golden With Beatrice is going to kill each one at a time, it's another verison of Higurashi and bloody and gorey in parts, Less though then Higurashi which is too insane

Probably between Toradora as a romantic comedy and Kyoukai Senjou no Horizon as a semi-serious story based show.

Skip Beat, best shojo heroine ever.
Black Butler, Sebastian is one hell of a butler.
Alice in the country of hearts, yes it doesn't follow the game; but I adore all the characters!
Sword Art Online, the game my kill you when you die; but it's so cool I still want to play.
Cowboy Bebop, can't beat the classics.
Soul Eater, if your OCD death the kid will make you worse.

The Slayers.
Hands down, it's the best anime I've ever seen. I usually can't pick a number one (like with favorite characters; it's just impossible), but that's the number one anime on my list. It's also one of the only anime (with Ranma and InuYasha being the others) I've ever seen where the English dub doesn't make one want to cringe, laugh uncontrollably, or mute it.
Other really good ones (the ones I've watched so many times over and over again that it's amazing the disks/VHS tapes still work) in no particular order:
-Fullmetal Alchemist (both animes were good, but I have to lean towards the second one that followed the manga, of course)
-Ranma 1/2 (90's anime...some of the best stuff ever made was 90's anime)
-Lovely Complex (I'm not usually into romance anime...but this is "laugh one moment, cry the next")
-InuYasha
-Digimon Adventure & Digimon Tamers (best two seasons)
-Detective Conan (and, of course, Magic Kaitou/Kid the Phantom Thief)
-Gundam Wing
-Sailor Moon
-Ookiku Furikabutte
-Yu Yu Hakusho
-Magic Knight Rayearth (Season 1 in particular)
-Yugioh; the Shadow Games (also known as "Season 0")
-Patlabor
-Hamtaro (yea, I did just say "Hamtaro")
-Doraemon
Also, it's not Japanese Anime, but Code Lyoko hooked me from the get-go.
PS: Clanned made me cry, too. ;_;
PSS: I also liked Yumeiro Patissiere, Saiyuki, Weiss Kruez, My Neighbor Totoro, Spirited Away, and Princess Mononoke

True, that...the light novel has a lot more content to it while keeping the comedy. I wish they'd made an adaption of the novels into an anime instead of Revolution and Evolution-R; I wasn't too fond of those two.

I don't watch anime a lot, so I don't really know that much of animes.
But from those I have watched, I liked these the most:
Soul Eater
Summer Wars
Ouran Highschool Host Club
Kakurenbo
Yuugen Kaisha
I also liked UN-GO and Phi-Brain a lot, but I never watched them till the end, so I can't really judge those animes.
Oh yeah, and I like Hen Zemi, because it is so freaky, strange and hilarious that I can't help but find the disgusting things shown in it funny ôo

Well I've just finished the first and second season of Black Lagoon, Magical Pokkan, Spice and Wolf and Angel beats all of which were awesome and I recommend the first and last.
The middle 2 require more open minds.

My favorite anime has to be Gurren Lagann! It really surprised me with how great it was. And, unlike stuff like Big O or Cowboy Bebop, it follows a cohesive plotline instead of "monster of the week" episodes.

Angel Beats. Dear God. I cried. I cried so much. I made my MUM cry.
Mononoke. It doesn't particularly have a plot, but the art is original and beautiful, even if the ending is quite anti-climax.
