I'm not sure if this is a bug, some option I've accidentally switched at some point, or corrupt files somewhere.
My problem: I can't change the resolution of any new games I create.
I know that config.screen_width and config.screen_height should work, but I change them and it does nothing. A previous game I have does still open at the resolution I set it at, but I've tried creating three new ones and they all appear to ignore the resolution changes I make when I launch them through Ren'Py. I think one may have changed to 800 x 500 when I set it to 1280 x 800...

Maybe this is not exactly a Ren'Py issue. I'm assuming you're running those games in windowed mode.
Go to preferences/display mode and hit the 'window' button there to update the display.
