Do you prefer to have an established MC or self insert?

I would prefer MC as highly customizable as possible. This also creates the drive to replay with different starting conditions.
To make the story flow with it, make necessary variables for character, and reaction of NPC on them. This creates the game really interesting!

Some key elements of MC background can be established, but the personality of MC should not influence on them.
